Top Recipes I'm loving: Breakfast Edition (Gluten Free and Dairy Free)

Oatmeal- I use ½ cup of gluten free oats and add granola, strawberries, blueberries, chia seeds, and almond butter on top. This keeps me full for hours and does not upset my stomach. This is a good recipe if you don’t have a lot of time.
Egg spinach Scramble: I make 2 scrambled eggs and add spinach, tomatoes, and bell peppers. This is a good recipe if you don’t have a lot of time.
Avocado toast: I use gluten free bread and ½ of a mashed up avocado. For seasoning, I add lemon, salt, and pepper. This is a quick recipe and if I have more time, I add a scrambled egg.
Gluten free vegan pancakes- I like to make these pancakes on the weekend when I have more time and can enjoy them. This recipe takes about 20-25 mins. I use gluten free pancake mix but if you want to make your pancakes from scratch there are definitely a variety of recipes to choose from. I top off my pancakes with berries and almond butter. This meal is very satiating and is definitely one I look forward to.
Gluten free vegan waffles- This is another weekend recipe I enjoy making. I have a mini waffle maker and this recipe usually takes me 20 mins. I top off my waffles with berries and syrup. This is another meal I look forward to after a long week.
